A Dreamy Dining Room...

 One of the perks of doing the type of work I do is getting to share some pretty beautiful spaces with equally excellent folks. I had the opportunity to serve a meal in a private residence this week-end where guests dined in not one, but three separate dining rooms. The home was hands down one of the most beautiful I have ever been in, but the formal dining room, brimming with holiday spirit, may have been my favorite dining room I've ever had the honor of serving a meal in.
Of course, the other two dining rooms were not shabby either. I just adore the holidays!

MN Banh Mi...

College recruiting visits took Finn and me to the heart of Minneapolis this week-end. After leaving Finn in the hands of the Augsburg University soccer team members, I took myself on a solo drive around the city. Minneapolis is lovely and so was the banh mi sandwich I treated myself to at Lu's Sandwiches on Eat Street. This sandwich would have been worth the drive on its own, but it turns out Finn had a downright fabulous time with the Auggies!

Winter Week-end Get Away...

For the third year running Leif and I escaped to the Thorpe House Inn and Cottages in Door County, Wisconsin for a little winter time rest and relaxation. We totally enjoy our quiet cottage, but also LOVE seeing all the friends we've made attending these dinners over the years. Can't wait to visit again!

Leftover Day 2017...

Our cozy leftover day tradition continued again this year. We cuddled up in out pajamas with some of our favorite people in the world to watch movies and gobble up our Thanksgiving leftovers. We took in The Swiss Family Robinson first before watching Baby Driver, Wonder Woman, Stand By Me and Everybody Wants Some. It really is one of my favorite days of the year in this little house of ours.

Sausage, Apple, and Cornbread Stuffing
Mashed Potato Casserole
Nan's Collard Greens
Beet Salad with Marcona Almonds and Chevre
Maple-Ginger Glazed Carrots
Green Beans with Lemon and Garlic
Skillet Corn with Brown Butter and Sage
All Butter Rolls
Pumpkin and Apple Pies

 Deep South Deviled Eggs

 Pimento Cheese and Crackers

 Beet Salad with Marcona Almonds and Chevre

 Thanksgiving 2018 Dish of the Day:

Skillet Corn with Sage and Brown Butter

1 28 oz. bag frozen corn
3/4 oz. approx. 1/2 cup fresh sage leaves
4 Tbsp. butter
1 clove garlic minced
1/2 - 1 tsp. sea salt
1/2 - 1 tsp. fresh cracked pepper
1/4 c. shaved Parmesan cheese

Heat frozen corn and fresh sage leaves in a large skillet over high heat for 10 minutes, or until corn becomes charred. Add butter, garlic, salt & pepper and continue cooking over high heat 5 minutes, until butter is browned. Remove to serving dish and sprinkle with Parmesan.

 Sweet Tea Brined Grilled Turkey and Gravy

Buddy's Helpers at The Day Nursery...

As part of Buddy's Helpers and the PepsiCo showdown's holiday efforts, Finn accepted a fundraising challenge. Today he bestowed a check to The Day Nursery to kick off the season of giving. I just love seeing my son, soccer, and The Day Nursery come together.

State Bound Shamrocks...

St. Patrick Shamrocks took their record to 23-4-2 tonight after a hard-fought 2-1 Super Sectional win over the Freeport, Pretzels. Yes, folks that means the varsity soccer Shamrocks have made history once again and will head to the state tournament in school history! This is just crazy exciting!
