Thursday Night with an International Flair

KINDRED spirits are not so scarce as I used to think.
It's splendid to find out there are so many of them in the world.”
― L.M. Montgomery

Yesterday evening I hosted an internationally themed seven course meal as part of a donation I made to a local nursery school.  Highlighted countries included France, Germany, Russia, Japan, Equador, Denmark and the good old USA because each destination had a special meaning to one guest at the table.  I just loved coming up with the various dishes on the menu!
france/egg. maple. chive. cream. citrus. arpege inspired
germany/brezel.  radish. onion. camembert. hefeweizen. caraway. beirgarten inspired
russia/reimagined. beets. gruyere. sherry vinegar. marcona. bomboloni. borscht inspired
japan/ chicken. ginger. sweet. spicy. garlic. gyoza inspired
equador/camaron. tomato. lime. orange. cilantro. patacones. ceviche inspired
denmark/dansk. frickadeller. smørrebrød. rødkål. lingonberries. dorothy inspired
usa/ something in a jar. cake. kind of. lemon. blueberry. buckle inspired

I stand by every dish I served last night, but man-o-man this little ode to Denmark delighted me in every way.  Something about all those berries, hints of cardamom and robust red cabbage worked like a dream to bring some of my favorite Danish flavors to life!
