Mexican Inspired Derby Day

After four years, throwing together a Kentucky Derby inspired buffet has become old hat, but adding a Cinco de Mayo twist to this year's menu allowed me to introduce spicy flair to long standing tradition. Yesterday, our friends hosted their annual Derby Party and once again entrusted me to provide the food for the day.  The house filled will familiar faces, "I'll Have Another" won the roses while mint juleps flowed. No-one wore a sombrero, but everyone seemed to enjoy my Mexican Derby Day fare.

Tiny Torta Jamon
Homemade Bolillos, Ham, Avocado, Queso Quesadilla, Refried Beans, Tomatoes, Jalapeno
Carnitas and Poblanos Rajas
Warm Tortillas, Pickled Onions, Chipotle
