Thomas JeffersonLet me put it to you this way...Gluttony is incredible, but it is a deadly sin for a reason and after our robust and highly delicious holiday season the time has come for our annual detox. If you'll remember last year I was on the verge of committing a crime for a piece of cake or a fried onion and as a result of my near nervous break down, we are trying to be a little more logical about cleaning up our culinary act this year.

The kids have decided we should be vegetarians for the next 30 days at least. Yep, welcome to the world of beans and brown rice, tofu and veggies, lentils and hummus! Emma and Finn are all about this adventure and Leif and I are totally on board. We are focusing on whole grains and organic fare, but we've all agreed we can have a little fish or white meat chicken on the week-ends if we feel like we need it. If you look on the top right corner you'll notice a new page featuring out vegetarian dinners. Hopefully updating it with photos and recipes daily will help keep us all on track. Check it out!
Tonight we enjoyed a lovely brown rice and organic black bean dish with tomatoes and roasted corn. It was really quite good and we didn't miss the meat a bit!I found a great blog called Eat Close to Home that has simple vegetarian dinners for a month on it's site. I decided to use these recipes and grocery lists as a guide for our vegetarian odyssey, but I am sure to put my own spin on things! Scrambled eggs and spinach are on the menu tomorrow. Cheers to clean eating!

Hi Emily! We loved the eggs with the rice and spinach this week! I added some sauteed wild mushrooms and tomato as a garnish and yum! What a perfect quick dinner. If you see some pictures on my vegetarian meals page of the dishes you like feel free to take them. I am posting the shifts I make to the recipes there...I'd totally go for the cabbage with the Tofu dish this week. Too fun!

What a wonderful idea!!!! I'll have to take a peek at the new section for some amazing, healthy options to add to my personal menu.

While in Hawaii, I had some amazing black lentils...I think they were called Beluga lentils. As a person who doesn't normally like lentils, I can honestly say these were divine! Hmmmm....I probably should have asked how they were made because it was all about the flavors!
