Dinosaur Kale

We all love this vitamin packed power house of a green; I just never thought we'd enjoy Tuscan Kale with pancakes, but we did tonight and I must say  it was quite delicious!

Ya gotta try yogurt corncakes, too! Equal parts plain yogurt and cornmeal, with a pinch of baking powder. Cook like pancakes. Wow!

I know I was very excited about your yogurt cakes, but I realized I was out of plain yogurt at the last minute! I was thinking blueberry may not be such a great substitute especially with the beans and opted to improvise with what I had, but your complete recipe is on my list of things to try for sure! Cabbage, apples and noodles are up tonight!

ooh, blueberries and black beans...orrrrrr, maybe not... :) Nice improv with almost-cornbread recipe baked in griddle cake format, though. :)

That cabbage/apple/noodle thing is also great with cooked potatoes and/or rutabagas and/or butternut squash instead of noodles. It's also divine with some kind of smoked pork (if you ever go back that direction). A smoked seasoning, like smoked salt or paprika, is a great addition to the veggie version.

I think only you could get Scott to eat kale with pancakes. Or if I told him you did it. He would think I was just pushing health food and made it up! August loves his kale too, just like mommy!
