Community Soup

Last week, I had the chance to help harvest the Irving school gardens and this today my friend (and fellow chef) and I served up a soup we had made from the vegetables the kids had yanked from the ground. I have to be honest this was one of the more unusual cooking tasks my friend and I have been given over our years at the school and he and I had a good laugh while we were mixing hot soup in a cooler in his front yard!
Pushing vegetarian vegetable soup to nearly 300 cupcake loving elementary school kids is a tough gig, but we were thrilled that most of them loved their school garden soup. We made the stock from the garden veggies and finished it off with squash, beans, broccoli, and carrots from the harvest. What a wonderful way to celebrate fall!
