Tiny Bites

Last night I put together a few appetizers for a small gathering. Each and every one turned out quite nicely and I just loved the earthy flavors in these tiny wild mushroom bouchees. I was pleased with the addition of fried tarragon to finish the bite.
The petite Asian chicken cakes below are always a hit at cocktail parties and I love their garnish of sugared mango. They sure pack some big flavor in a small bite!
