Talking Turkey.

Each year my friend Tee and I pick a day to get together to talk about our Thanksgiving plans.
We got together yesterday and this year she tried out a version of a sweet potato recipe she enjoyed at GW Fins in New Orleans. Tee is a very good cook and these sweet potatoes made for a very sweet ending to our lunch. Her recipe is included below and you can read about the lunch I made for her at Inspire Mel.

Mashed Sweet Potatoes with Bourbon and Vanilla

5# sweet potatoes peeled and cut into 2" cubes
1.5 ripe bananas peeled and sliced
2 C Cream
1/2 vanilla bean-split and scraped
1/3# honey
2oz light brown sugar
1/8 C freshly squeezed orange juice
1T Salt
1T bourbon
Bring the water and 2t salt to boil. Add the potatoes and cook until tender about 15 minutes.
While the potatoes are cooking, in a separate pot, combine the cream, honey, brown sugar, banana, orange juice. Bring to a boil and cook for 5 minutes. Scrape vanilla bean and puree until smooth. Add the sweet potatoes and mash gently leaving some chunks of potato. Stir in the Bourbon and some soft butter.
